About 4 years ago, while at a friends wedding in the South Island, I discovered this cake. We stayed at Opawa Homestead a beautiful little b&b, where on the first night Julie our host made us Opawa pineapple cake with hokey pokey ice cream. It is truely awesome on a plate. I managed to get the recipe off her and it has become a family and friends favourite.
Opawa pineapple cake recipe
2 cups flour
2 tsp baking soda
dash salt
1 ½ cups sugar
Sift all together then add 2 eggs & 2 cups crushed pineapple
Mix well and pour into greased and floured 13x9x2 inch pan.
Cook 150 C degrees for 1 hour.
About 5 minutes before ready, put into saucepan the following:
1 ½ cups sugar
100g butter
½ tin evaporated milk
dash salt
1 tsp vanilla
Boil 3 minutes, stirring constantly. Pour over cake and spread. Leave to soak in and serve with ice cream/cream.
Ice creams I like with it are, french vanilla & maple walnut. I hope you enjoy!
